The Menu
Reception & Amuse
Potato Tortilla, Red Pepper, Crispy Jamon
Wine | Casteller, Cava Brut Método Tradiciaonal NV
*"A bright and zesty expression of the traditional sparkling wine of Penedès. "Casteller" or "Tower" refers to the tradition of different clans and villages competing during holiday festivals to see who can build the tallets human tower! References to their presence in popular celebrations first started to appear during the eighteenth century. This lovely bubbly honors the tradition and conviviality of these festivals and the long tradition of sparkling winemaking in Catalonia"
Course One
Gambas al Ajillo Toast | Shrimp, Preserved Meyer Lemon Aioli, Grilled Bread, Sorrel Salad
Wine | Gaintza, Getariako Txakolina 2021
*"Located in the Basque region of Spain, the Gaintza estate and winery was founded by Andrés Lazkano in 1923 for the purpose of making wine for home and selling the small amount leftover directly to the neighboring villages. The winery has since expanded and is now run by 4th generation, brothers Joseba and Urtzi Lazkano, who are focused on their small but fierce region and it's potential for native varietals. 100% estate grown grapes that make slightly effervesant wines with gulpable appeal. Notes of lemon, apple, green herbs, sea spray & mineral"
Course Two
Wood Grilled East Coast Oysters | Chorizo Breadcrumb
(Pescatarian | Extra Virgin Olive Oil Breadcrumb)
Wine | Columna, Albariño, Rias Biaxas 2022
*"DO Rias Baixas, on the Northwest Atlantic coast of Spain, is home to the queen of Spanish white grapes - Albariño. This area is comprised of 5 non-contiguous subzones that give a wide spectrum and rich tapestry of terroir to the grape, which is known for showing its provenance very clearly. Columna can be found in Condado de Tea, the warmest subzone, and produces wines that showcase more generous fruit and ample body. This is a fresh, approachable expression of the grape, showcasing aromas of quine & jasmin, with flavors of pear skin & honeysuckle"
Course Three
Pinchos Morunos | Vermont Pork, Sherry Braised Lentils, Tomato & Pepper Escabeche
(Pescatarian | Grilled Swordfish)
Wine | Bodegas Torremoròn, Tempranillo, Ribera Del Duero 2021
*"Torremorón, made in the hamlet of Quintanamanvirgo in DO Ribera del Duero, is an example of how much can be done when you start with beautiful raw material. Fewer than 100 people live in this tiny village, and 85 of them work at the winery... the rest of them work at the bar. When you taste Torremorón, there is no "makeup" - just the unadulterated expression of old-vine Tempranillo that lets you drink like the locals do. Fresh black & blue fruits; seamless and expressive"
Course Four
Pressed Duck Leg Croquette | apple butter, smoked paprika potatoes, duck jus
(Pescatarian | Grilled Salmon)
Wine | La Antigua, Clásico, Garnacha & Tempranillo, Rioja Reserva 2012
*"Inspired by the winemaking that was popular in the first half of the 20th century, Alberto's winemaking emphasizes freshness and minerality, leading to balanced, long-lived wines. Old vine Garnacha, Tempranillo and Graciano planted in north-facing, high-altitude vineyards produce grapes that ripen slowly, showcasing intense flavors of greater balance and focus. The vineyards are extremely scattered and steep which makes the terrain impossible to mechanize, and all vineyard work must be done by hand. Smoke-and spice- accented cherry and red berry aromas are complemented by floral oil, game and pipe tobacco. Shows very good energy and suave floral character on a long, fruit- driven finish"
Final
Autumn Arroz con Leche | sherry poached pear, cinnamon
Wine | Begonia, Sangria Tinta, Monastrell & Bobal NV
*"Begonia Sangira is a delicious blend produced from the finest grapes, spices and natural fruit essences from the Iberian Penninsula, using a family recipe going back two generations. Our Monastrell and Bobal grapes are ripened in the rugged vineyards in Cuenca and Yecla Spain, and blended with Azahar flowers, a mix of traditional Mediterranean spice and herbs, and the essence of real Valencia oranges"
